Cucumber and Mixed Herb Salad

Fresh, clean and cool — the perfect accompaniment to any Paleo meal.

  • 1 cup chopped cucumber (skin on)
  • 1 tablespoon fresh dill, chopped
  • 1 green onion, chopped
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh basil, chopped
  • 1 teaspoon olive oil
  • 2 tablespoons fresh lemon juice
  • Sea salt and pepper to taste

Combine all ingredients in a bowl and mix well. Let sit for 15 minutes. Serves 1.
