Chilled Wilted Ginger Spinach Salad

  • 5 cups fresh spinach
  • 1 tablespoon fresh chopped ginger root
  • 2 fresh garlic cloves, chopped
  • 1 tablespoon olive oil
  • 1 tablespoon sesame seeds
  • Sea salt and fresh pepper

Add olive oil to a saute pan and heat, then add ginger, garlic, salt and pepper. Add spinach and remove from heat. Stir until spinach is fully wilted. Mix well and refrigerate. Serve chilled topped with sesame seeds. Serves 2.
