Beef-Stuffed Portobello Mushrooms With Garlic Spinach

  • 6 ounces ground grass-fed beef
  • 1 large portobello mushroom
  • 1 clove garlic, chopped
  • ½ teaspoon cayenne pepper
  • ¼ onion, chopped
  • ½ green bell pepper, chopped
  • 2 teaspoons olive oil
  • Sea salt and pepper to taste

Preheat oven to 350 degrees. In a bowl, combine ground beef, onion, oil, garlic and cayenne. Pull the stem out of the mushroom and turn upside down on a baking pan. Mound beef mixture into the mushroom and bake for about 20 minutes or until beef is no longer pink. Serves 1.
